Q: We're having an outdoor reception in the springtime; however, it can get quite warm here. How do we ensure that our wedding cake will hold up?
A: It would be a shame to see your beautiful cake melt before you get to enjoy it. Fondant, although a little pricier than traditional icing, will hold up better in the heat and humidity. It's less likely to melt, and added decorations will stay in place. Opt for white or lightly colored fondant instead of dark colors to lessen the risk of the color running or separating from the cake. Ask your caterer to put the cake out as close to the beginning of the reception as possible so that it won't sit outside for too long. And, if you're not in a covered tent, provide an umbrella or a light canopy to keep it in the shade.
